What you track will depend quite a bit on the kind of riding you do, how wet/muddy/dusty the road is, and how comfortable you are doing your own maintenance.
Here are some suggestions to get you started.

Here are some common bike maintenance tasks to get you started with setting up Bike Mec
Clean & lubricate your chain (if you wax your chain then setting a distance of 250mi/340km is a good start)
Measure chain for wear and replace when it is "stretched"
Inflate tires
Top up or replace tubeless sealant in tubeless tires
True wheels and check spoke tensions
Charge electronic derailleur batteries
Replace coin batteries in shifters
Replace coin batteries in speed/cadence/heart rate sensors
Charge mini electric pumps
Charge power meter
Clean dropper post stanchion, grease seals
Check MTB fork and shock baseline sag and adjust pressures
Overhaul MTB fork
You'll want to create parts to track their wear based on mileage/time on the bike or in the case of wheelsets so you can track usage as you move them on and off bikes. Sometimes it's just nice to know when you bought something and how long you've been using it or the part details for a replacement.
Wheelsets
Tires, front and rear separately since rears will wear much more quickly
Brake pads and rotors
Chain
Bottom Bracket
Cassette
Headset
Bike computer or other electronics
Electric mini pumps
